Found Something in Your Food? Here’s How PCR-Based DNA Testing Can Help Identify Food Contaminants
Picture this: a customer at your restaurant finds what looks like a fly or a lizard tail in their curry. Panic sets in. Was it really an insect? Did it fall in during cooking, or was it already there in the raw ingredients? Could anyone get sick from eating around it? And most importantly how to find out, one way or the other, exactly what it was?
Every kitchen, home or commercial, has had some version of this moment: a strange fragment, a smear that doesn’t look like food, a suspicion that won’t go away until it’s checked. Most of the time, the naked eye can’t settle the question with confidence. That’s where AMMAGENOMICS comes in with PCR-based DNA testing. It turns “I think I saw something in there” into a clear, evidence-based answer.
Why “It Looks Like a Fly” Isn’t Good Enough
When something unusual turns up in food, the natural instinct is to visually inspect it. But cooking changes everything. Heat, spices, oil, and prolonged simmering can:
- Distort the shape and color of an insect or contaminant beyond recognition
- Break contaminants into fragments too small to identify by eye
- Make it impossible to tell whether the object is even biological in origin
Visual identification alone can lead to the wrong conclusion either falsely accusing a kitchen of negligence or missing a genuine contamination event. That’s a real risk, both for a business’s reputation and for public health.
What Is PCR-Based Genetic Testing?
PCR (Polymerase Chain Reaction) is a laboratory technique that amplifies tiny fragments of DNA. They can be analyzed and matched against reference genetic databases. Even when a sample has been cooked, crushed, or partially degraded, trace DNA can sometimes survive enough to investigate whether DNA associated with a suspected organism is detectable in the submitted sample, including:
- Insects (e.g., housefly, cockroach)
- Reptiles (e.g., lizard)
- Rodents (e.g., rat)
Depending on the suspected organism, sample condition, and availability of an appropriate genetic target, this testing can help investigate material associated with these. Other selected biological contaminants also can be detected giving a molecular, evidence-based data point rather than a subjective visual guess.
Important note: This PCR-based testing service for investigation of selected insects, reptiles, rodents, or other biological contaminants in food is currently outside the NABL-accredited scope of AMMAGENOMICS. Results for this service are issued as non-NABL-accredited test results. Our NABL accreditation applies specifically to GMO testing, polyphenol, MDA, antioxidant testing and A1/A2 milk adulteration testing, it does not extend to this service.
What the Result Tells You and What It Doesn’t
It’s worth being precise about what this testing can and can’t establish:
- A result answers a narrow, specific question: is DNA associated with a suspected organism detectable in the sample submitted for testing?
- Detecting that DNA does not by itself establish exactly when or how the organism entered the food.
- A “not detected” result does not prove an organism was never present — DNA can be affected by heat, degradation, sample quantity, food composition, and which portion of the food was submitted.
- The result is not a general food safety inspection, a hygiene certification, or a statement about a kitchen’s overall practices. For businesses seeking a broader food safety assessment, this testing is a useful tool. It is good for investigating one specific concern a complement to, not a replacement for, full food safety compliance and inspection processes.
What If Someone Becomes Ill After Eating the Food?
This is an important distinction. Finding DNA from a suspected organism in food does not by itself prove that the organism caused a person’s illness. Symptoms like vomiting, diarrhoea, abdominal pain, or fever after eating can have many possible causes. It can be because of microorganisms, toxins, allergens, chemicals, or unrelated medical conditions.
Anyone experiencing significant symptoms should seek appropriate medical evaluation directly. This testing is a food sample investigation. It is not a medical diagnosis, and depending on the incident, additional food microbiology or other food-safety testing may also be appropriate.
Who Should Use This Service?
Restaurants, hotels, and catering businesses: protect your establishment from unfounded accusations. Take genuine complaints seriously. A detailed lab report is far stronger than a verbal dispute with a customer. It shows that food safety is taken seriously.
Food delivery and cloud kitchen businesses: when food is prepared in one place and consumed in another, questions of “when did this happen” become harder to answer without evidence. DNA testing adds an objective layer of accountability.
Homemakers and households: if you’ve ever second-guessed whether that dark speck in the curry was a burnt spice or something else, testing can put your mind at ease or confirm a concern worth acting on.
Institutional kitchens (schools, hospitals, canteens): where large numbers of people eat from the same batch, verifying a contamination incident quickly matters for both safety response and internal quality control.
Food quality auditors: for disputes or internal audits, an objective lab report provides evidence to work from.
Sample Collection Is Important
If biological contamination is suspected, proper handling significantly improves the usefulness of the investigation:
- Preserve a representative portion of the affected food
- Retain the suspected foreign material, if available
- Use a clean, leak-proof container
- Avoid unnecessary handling or cross-contamination
- Record when and where the incident occurred
- Keep photographs or videos available
- Contact the laboratory promptly for sample collection and transport guidance
How the Process Works
- Sample Handoff — Following the collection guidance above, the sample is sealed and handed off to us (in person, by courier, or via our pickup guidance).
- Lab Submission — The sample is logged at our facility with proper documentation.
- DNA Extraction & PCR Amplification — Even partially cooked or degraded samples are processed to extract usable genetic material.
- Species Identification — The amplified DNA is compared against reference sequences to identify the organism.
- Report Generation — Will receive a clear, documented lab report stating our findings, which can be used for internal review, customer communication, or quality audits.
Why Choose AMMAGENOMICS
Established lab expertise — we hold NABL accreditation for GMO and A1/A2 milk adulteration testing, and apply that same molecular science to our PCR-based DNA screening service
- Objective, evidence-based investigation — moves the conversation beyond guesswork
- Works even on cooked or damaged samples — where visual inspection alone often can’t
- Clear guidance — on sample collection and handling to get the most reliable result
- Builds trust — with customers and the company team
Peace of Mind, One Test at a Time
Whether we are running a restaurant kitchen, managing a catering business, or simply want certainty about what showed up in tonight’s dinner, AMMAGENOMICS’ PCR-based testing service replaces speculation with evidence. It’s a small investment that protects customers’ health, business reputation, and our own peace of mind.

Disclaimer:
This specific PCR-based testing service for investigation of selected insects, reptiles or other biological contaminants in food is currently outside the NABL-accredited scope of AMMAGENOMICS. Results for this service are issued as non-NABL-accredited test results. NABL accreditation held by the laboratory applies only to tests specifically included in its current accredited scope.
PCR detection of genetic material does not by itself establish when or how contamination occurred. It will not tell whether the detected organism caused illness. Results should be interpreted together with sample history and other relevant evidence.
