Is Your Paneer Really Paneer? How PCR Helps Catch Adulteration
The Fake Paneer Problem: Why Molecular Testing Is Becoming India’s Best Defense
Paneer is one of the most trusted names on an Indian plate. It’s the protein millions of vegetarian households build their meals around safe, simple, and familiar. And that’s exactly the trust adulterators are exploiting.
On August 18, 2026, food safety officials in Mathura, Uttar Pradesh raided a paneer manufacturing unit. They destroyed roughly 500 kg of adulterated paneer. They seized the chemicals and raw materials allegedly used to make it part of a wider district crackdown on dairy fraud. It’s not an isolated case. Similar raids have turned up adulterated paneer supply chains. It has been stretched across North India. Several states including Madhya Pradesh, Maharashtra, Gujarat, and Chhattisgarh have moved to restrict “analogue paneer,” the non-dairy substitute made from vegetable oils, starch, and emulsifiers that has increasingly found its way into restaurants, sweet shops, and food delivery kitchens without being clearly disclosed to consumers.
The problem isn’t that non-dairy paneer alternatives exist under FSSAI rules, they’re legal as long as they’re labelled as non-dairy. AMMAGENOMICS use PCR method for paneer adulteration test. The problem is that they often aren’t labelled at all and are quietly sold or served as the real thing.
Why do the usual home tests fall short
Search online and you’ll find plenty of kitchen tricks for spotting fake paneer the iodine test for starch, the arhar dal test for detergent, checking how a piece behaves when boiled or burned. These tests can offer a rough clue. But they’re subjective, easy to get wrong, and not something a restaurant, retailer, or food safety auditor can rely on to make a defensible call. When adulteration shows up in bulk supply chains worth lakhs of rupees, “it turned slightly red” isn’t good enough. That’s the gap between molecular diagnostics is built to close.
What PCR-based testing adds
At AMMAGENOMICS, we’ve developed a PCR-based test that looks at paneer from the molecular level rather than the surface level. PCR (polymerase chain reaction) works by detecting genetic material DNA which makes it particularly effective at two things:
- Confirming the presence of genuine dairy-derived DNA markers, verifying that a sample is authentic cow or buffalo milk paneer rather than a substitute.
- Detecting plant-derived genetic material from starch, maida, and other non-dairy fillers that are commonly used to bulk up or replace real paneer.
Because these markers are detected at the DNA level, this kind of testing is far less prone to the ambiguity of a home color-change test. The presence or absence of a specific genetic signature is a much more precise result to work with.
It’s worth being clear about scope. PCR testing detects genetic material. So adulterants that don’t contain DNA like detergents, urea, or refined oil, sometimes used in synthetic milk and paneer fall outside what PCR alone can confirm. Catching those requires complementary chemical and analytical methods run alongside the genetic test. That’s exactly why we don’t treat any single test as the final word. So, to know your paneer really paneer, PCR helps to catch adulteration.
The cat-and-mouse reality of food fraud
Anyone who’s spent years in food adulteration testing will tell you the same thing: detection and evasion move in cycles. As soon as a reliable test for one type of adulterant becomes common, those cutting corners find a new one to use. This pattern has played out for decades, and one new technology won’t make it disappear.
That’s why AMMAGENOMICS doesn’t rely on a single method to verify paneer authenticity. We use PCR method for paneer adulteration test. We combine PCR-based genetic testing with complementary analytical tests. This helps us catch adulteration from more than one angle genetic and chemical making it significantly harder for adulterated products to pass undetected.
Think of it the way a criminal investigation works. A photograph alone tells you something. But fingerprints, DNA, and chemical evidence each add a different piece of the picture. Food authenticity testing works the same way. When independent tests point to the same conclusion, confidence in the result gets a lot stronger.
Why this matters beyond the lab
Paneer adulteration isn’t just a quality issue it’s a trust issue that touches restaurants, hotels, catering businesses, cloud kitchens, retailers, and the household’s buying paneer for a family meal. For a food business, one questionable batch can mean customer complaints, rejected supplies, regulatory scrutiny, and reputational damage that costs far more than the testing would have. The cheapest paneer, in that sense, can end up being the most expensive.
For consumers, it comes down to something simpler: we deserve to know what we’re eating. A family serving paneer to their children shouldn’t have to wonder whether it’s real. Fake paneers don’t always announce themselves. It looks white, feel soft, and even taste acceptable, which is exactly why appearance alone was never a reliable test. So, to know your paneer really paneer, PCR helps to catch adulteration.
Scrutiny around analogue paneer is growing in recent days. More states move toward stricter labelling and enforcement now. Having a reliable, lab-grade way to verify what’s actually in a paneer sample is becoming less of a nice-to-have and more of an operational necessity.
If you’re a lab, retailer, food business, or quality auditor looking to build authenticity testing into your process, reach out to AMMAGENOMICS. If you suspect adulteration in paneer or another food product, contact us to discuss the appropriate testing strategy for your sample.
Test the food. Verify the ingredients. Protect trust.
The specific tests required depend on the food matrix, suspected adulterant, and intended purpose of analysis. PCR detects suitable DNA targets, and we use it alongside appropriate complementary methods when investigating non-DNA adulterants.
